Two Homemade Soups: vegetable and tortilla

I’ve been craving these two soups lately so I decided to spend and hour in the kitchen to cook them today. Try for yourself!

Tortilla soup:
1 tb Olive oil
1/2 chopped Onion
2 cloves Garlic
1/2 minced Jalapeño
1-2 tsp Cumin
1-2 tsp Chili powder
Oregano, to taste
1 can Tomatoes, fire roasted diced with chiles
1/2 carton low sodium Chicken broth
1 diced Zucchini
1/2 can Black beans, rinsed
Small handful Cilantro, chopped coarse
2 small or 1 regular corn Tortillas, torn into pieces
Salt and pepper to taste

Sauté garlic, onion, jalapeño in oil until begins to soften. Add Seasonings and zucchini, stir and cook until begins to soften. Add tomatoes and stir. Pour in broth. Bring to a boil then lower to simmer. Cook about 15-20 minutes or until flavors meld and vegetables are softened. Add cilantro, beans, and torn tortillas, and salt and pepper if desired. Stir and cook an additional 2-5 minutes. Serve or store.

Rustic Comforting Vegetable soup:
1 tb Olive oil
1 Leek, white portion, chopped
2 cloves minced Garlic
Thyme
Oregano
Italian seasoning
1 diced Carrot
1-2 stalks diced Celery
1 diced Zucchini
1/2 can Cannellini beans, rinsed
Tomatoes, homemade oven roasted (I highly recommend just using a can of fire roasted diced tomatoes instead of roasting them as I did)
1-2 cups chopped Kale
Salt and pepper to taste

Sauté garlic, leek, celery, onion until soft and aromatic. Add spices and zucchini, stir and cook until it begins to soften. Add tomatoes and broth and stir to combine. Bring to slow boil then lower to simmer and cook 15-20 minutes. Add kale and beans and cook additional 5 minutes to meld flavors. Season as needed w salt and pepper. Serve or store.
